Over the last several months of my diet I have been experimenting with snacks. I have been trying to find foods that are healthier yet still tasty. This can be [ok IS] very difficult for a carb addicted person like myself. One thing I have rediscovered is my love of cucumbers. It was kind of accidental actually. I was feeling up the regular cukes in the supermarket one day and frowning at how they are all mushy and uappealing looking, when next to them I noticed a package of mini cucumbers. They come 4 to a package and weren't cheap but they are full of flavor and don't spoil since one is a nice serving size.

I have also developed an addiction to hummus. My favorite is regular or lemon. I am not brand loyal but Sabra makes a variety of flavors, my favorite being the Hummus with roasted pine nuts. I don't know exactly the calories and nutrition of hummus but I did see a news report that it is healthy with "good" fats and it is just delicious in sandwiches in place of mayo. Tabouli was suggested to me and I like it in limited quantities. It is also good spread on sandwiches. [has raw onions but since they are finely chopped they are ok].
Anyway, as I have mentionned before cucumbers make a great alternative to crackers for dipping or piling things on. Below are a couple of pictures of my "creations"

mmm...these dont sound bad at all...cucumbers are so fresh and i like hummus...nice.
YUM! I love me some hummus of any sort. I recently found a carmelized onion hummus and wow. It's amazing. My taste buds did a happy dance. As for cucumbers, I like to slice them really thin, put a little salt on and some black pepper and spritz on some vinegar. HEAVEN! Especially if the cuke is cold, from the fridge.
I just bought some cucumbers at the store yesterday. I may have to try this. Wonder what the kids will think?
So funny you should post this...I started the Flat Belly Diet about 3 weeks ago, and just discovered my love of hummus. LOL My family thinks I'm NUTS....I bought the spicy vegetable one, and it is DELISH!

I love sliced cucumber in my water too. So refreshing.
Ohh I LOOOVE Sabra's Luscious Lemon hummus :) Mix up the flavors though, or you might get sick of it. (I know it seems impossible, but it CAN happen.) I recently tried the Chipotle flavor and it was delish! My new favorite. It's pretty spicy though!

yep, crisp cukes are very tasty. I've been eating very thin sliced cheese - cut with one of those cheese slicers so it is paper thin on Reduced Fat wheat thins - yummy - and that way I still get in my cheese fix

That looks so amazingly good. I am going to make the cucumbers and hummus today. However, the seafood salad looks the yummiest.
One of my favorite snacks is edamame. I eat bags of it, boiled and tossed with sea salt.

Well, I'm a whore for ranch dressing. So I will eat any sort of raw vegetable, as long as it's soaking in ranch dressing (it can even be fat free ranch). Carrots, cherry tomatoes (although I have a tiny problem with things exploding in my mouth), and celery all taste lovely. And I make my own snack packs with pretzels, nuts, and chocolate chips. Yes, they have chocolate chips, but they also have almonds and if you want me to eat almonds, you have to give me chocolate chips. And Sabra IS the best hummus ever. I'm so glad you discovered it!
Mmmm Yum! Hummus & Taboli are some of my favs. My husband's family is from Syria & so these are always on hand... homemade from scratch, SERIOUSLY GOOD!!! :)

I love mangoes as a snack - or just slice up a tomato and put a little salt, pepper and basil on it.
My favorite healthy snack is definitely bananas with a little bit of peanut butter on it. You get some fruit and some protein all in one. Plus, it's easy to pack for a snack during the day if you get those little disposable peanut butter packets.
I just found your blog but really like it! I'm trying to lose some post-baby weight, so I'll definitely be wanting some healthy meals.

Try the english cucumbers. costalitle more but crisp and will last longer.
Don't you just love summer when we can get the produce fresh ~ and the prices are so good too! U need to try hummus. I have never had it!
I like cucumbers too. I put them out in my veggie platters with grape tomatoes and mini baby carrots. Then I have a sour cream French onion dip, ranch dressing and salsa (which I make with tomatoes, onions, avocado, three colors of sweet peppers and some Chinese vinegar.)
I've wondered if those mini cucumbers were any good!
Cucumbers--that's a nice idea. I enjoy hummus as well--and I prefer the regular flavor to most of the other varieties.
