I Cooked Dinner Last Night.... A True Story

If you read my blog with any regularity you know that I don't cook very often. I have a few meals that I cook, meatloaf and baked macaroni and cheese, crockpot chicken and spaghetti, but other than that I tapped out. I am great with a menu though, eat in or take out.

Well last night I decided to make a quick and easy dinner. I had some stir fry chicken thawing so I decided to experiment with it, perhaps some of my Chemistry lessons were still giving me flash backs, who knows. Any way I put the half frozen chicken in a pan with some heated oil.

 Ooops
I opened the package and plopped it into the pan and let it start to cook. When I flipped it over I noticed the label still stuck to the meat. Oops... no problem it peeled right off with a fork. I continued to cook until 99% finished. I added some Worcestershire Sauce as it simmered. When it was just about done I added a package of frozen veggies.
Simmering chicken
I lowered the heat and covered the pan and let it all simmer, stirring occasionally. Meanwhile I boiled some Jasmine rice. I use Success Rice as it is fool proof.... most of the time... so I thought.  When the chicken/veg combo was done I took the rice from the boiling water and tasted it and it was still hard-ish. I put the rice in a bowl with a bit of water, covered and microwaved it for a couple of minutes.. voila it was fine.
Boiling "Success" Rice
When everything was just about done my husband comes home and seeing me cook shows me what is in his hand. A bag from McDonald's, seems the kids told him they needed dinner [they didn't know I was upstairs slaving away].
Apparently it was 49 cent cheeseburger day at MickyD's. Yeah ok so I ate one and finished my masterpiece. I plated it [I watch cooking shows] and I must say it tasted pretty good. The chicken was a bit dry but it all tasted fine.
Doesn't that look healthy
One daughter said, no thanks the other did have some later and said it was good [but chicken dry] I took some to work last night and the rest went with the husband to work today..so all is good.

I'm beat, I think I am going to take tonight off.

PS. I blogged about college and a long lost professor yesterday and the "Old Prof" commented on the blog. I was thrilled... and he is still funny. Go have a read.

Nice job! Laughed at the label stuck on the meat ... I am SO not a cook, so can appreciate that ... we do take-out 99.9% of the time, except when I get a wild hair to attempt something other than take-out and turn on the oven. This ususally results in smoke alarms going off and later, 49 Cent cheeseburgers. Hey - cannot be good at everything, right?

You're too funny. Once I'm not sick, I see sushi, a martini, and perhaps a hands-on recipe lesson or two in your future! :)

It looked amazing!

I once made a salad and didn't take the little stickers off of the tomatoes and my husband pulled it out of his mouth and told me I needed to be more observant.

Whatevs.

It was still a good salad!

I seriously hate cooking too but that, my friend, is right up my alley and worth making!

Haha, I love it! How funny is that that your kids told your hubby they needed dinner. I wish I would have known it was 49 cent Burgers at McDonalds. :) Glad the dish turned out well. I'll have to try it out sometime.

I've done that whole label in while it's cooking thing more than once (or twelve times).

I laughed at the label too! That is the sort of thing that I would do!
I laughed even more when I read what your old teacher had to say!
Yes, you can make vodka from potatoes. in fact you can make alcohol from anything that has sugar in it. It all comes down to letting it ferment long enough.
My FIL makes a lot of his own wines, and believe me, potato wine curls your toes up!

I've done the label thing before. That's why I don't attempt cooking.

Chichen and stir-fry veggies, that is the healthiest stuff to eat.
But every kid chooses the cheeseburger-sorry.

I would rather have what you cooked EVERY day of the week rather than Mickey D's.

That looks really good! And what you made looks good, too...HAHA!
Hey, did your kids really not know you were cooking, or is it the reason why they called for backup??
